Apple Fritters


Staying at home so much, with the weather getting colder, my thoughts keep turning to food, even when I'm reading a book (or is it especially when I'm immobile, on the couch, reading a book? Maybe I should stop reading, to lose weight? That's a new one!). I keep imagining warm, melty, delicious, yeasty, sometimes greasy, comfort food. It doesn't help that smart algorithms detect any time I look up or share a recipe on my phone, and then offer even more delectable suggestions.

I couldn't get the idea of apple fritters off my mind after looking at a recipe that came 'into my field of vision' online. I'd copied it into my recipe folder in case it proved elusive enough that I'd never find it again. My mind started churning: I had all those ingredients on hand. It's cold. I'm home. I have no appointments. I'm hungry! I'm overweight, but that doesn't seem to weigh as heavily - ha ha - in my decision. Delayed rewards ... hmm, okay. I'll delay my weight loss until after I've indulged ... 



So I got off my butt (that's my exercise, right!), and decided I had to try out the new recipe. It turned out really well, tasty and delicious. Dale remarked that the batter was really light. That got me thinking, so after cleaning up, I started to review the recipe in my mind, and realized that I hadn't added the 1/2 cup of butter! Without it the batter was fine, the consistency great, and lighter in calories. There's only 2Tbsp of sugar in the mixture, and I use a combo of 3:2 white to wholewheat flour. Plus, it's got fresh apples in it, and I use olive oil ... so all in all, it's ALMOST healthy. The sugar comes in when you dredge it with confectioner's sugar at the end. Mmm, mmm, mmm, scrumptious!

 


Maybe it's just as well I left the butter out!
